It's the long awaited return of Luz Helena's scrumptious pink bourbon! Bursting with fizzy raspberry and lemon, a creamy toffee sweetness and delicate florals, we are well and truly back in love! She's clean, sweet and nuanced- all the things we love in top washed coffees. This pink bourbon lot is grown at Finca Maracay, harvested following strict ripeness criteria, then floated and hand-sorted to remove any defects. Cherries are exposed to 30 hours of underwater fermentation before being pulped. Parchment is gently washed, then dried in temperature controlled conditions until ideal moisture content is achieved.

This micro-lot is 100% Pink Bourbon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.
