How long should my espresso take?

The rule of thumb is 25 - 30 seconds extraction time (the time it takes for the espresso shot). 

If it’s too long or too short, how can I change it? 

If your shot is taking too long (30+ seconds) your coffee is ground too fine, you need to adjust your grinder to a coarser setting. 

If your shot is taking less than 25 seconds, your coffee is ground too coarsely and you need to adjust your grinder to a finer setting.

What’s the secret to perfect milk micro foam? 

It’s ALL about the spin/whirlpool. You need to position your steam wand so that the milk in the jug spins, this means that the air will be evenly incorporated throughout your milk and you can pour super silky milky coffees!
