REGION: Aponte, Narino
PROCESS: Honey
VARIETIES: Castillo
ALTITUDE: 1700-2100 MASL
NOTES: Grapefruit, honey, red apple
Produced by indigenous smallholders in Aponte, Narino, this honey processed castillo is fruit forward and syrupy sweet. It stood out on the table during our public cupping with partners Cofinet late last year. Sweet apple and grapefruit acidity, good body and texture, well balanced- it's an everyday banger. We're very excited to be working more closely with Bethany and Cofinet this year. Consistently high quality Colombian coffees, accessible and versatile.
In Aponte, producers have mastered the art of honey processing through years of experience. Growers’ production is very small and relative humidity is low. This helps the process as not much space is required, and coffees dry much faster compared to other coffee producing regions.
